“The Rest is Silence”

More chef news this week, with moves, announcements and a cookbook, as well as the sad passing of a renowned food critic.

Callum Graham

Following last week’s announcement of Callum Graham’s departure from Bohemia after nine dedicated years, his next venture has been made public; and he is to take an Executive Chef role at the award-winning Wild Rabbit.

The gastro inn currently holds 3AA Rosettes for their modern British menus that move with the seasons, focusing on the best of local ingredients.

The inn is part of the Bamford Collection which comprises a number of properties across the Cotswold area, and includes Daylesford Stays and Daylesford Organic.

We can’t wait to find out what Graham brings to the Bamford Collection, and whether he can bring with him his Michelin Star charm.

Paul Welburn

Speaking of Michelin Star chefs, we were delighted to hear about Paul Welburn’s new cookbook, Evolve.

The Yorkshire born Chef announced his move for new pastures at the end of 2024, after achieving and maintaining 3AA Rosettes at the Cygnet restaurant at The Swan Inn in Islip.

Welburn was something of a mainstay in Oxfordshire, previously winning 1 Michelin Star at The Oxford Kitchen, the first in the city for three decades, but has traded The Cotswolds for Cornwall.

A book of culinary delights surely awaits and there is a link here where you can purchase a copy for yourself.

Richard Vines

The hospitality world was saddened this week to learn of the passing of Richard Vines, aged 71.

The celebrated writer and broadcaster was previously Chief Food Critic at Bloomberg where he spent 25 years of his illustrious career.

The Caterer magazine featured an obituary for Vines, stating that “he has been remembered by industry friends and colleagues for his “sartorial splendour, his bon viveur [and] his kindness”.

There was an outpouring of sadness across the internet and social media at the death of the greatly respected and ever-present figure; who, in 2021, set up his own weekly restaurant review column along with Pierre Koffman.

Koffman posted a picture of Vines with the message “RIP, the rest is silence”.

Tony Parkin and Opheem

Now, I may recently have been bragging about my upcoming visit to Opheem (not to mention it AGAIN), but this time my mention is more in keeping with the newsworthy.

Joining Aktar Islam’s distinguished restaurant is Tony Parkin, who returns to the UK following a stint and a Michelin Star in Ireland at Waterford’s Cliff House Hotel.

The Chef, who featured in series 17 of Great British menu, previously headed up the Tudor Room at 5 Star Great Fosters in Surrey, and his career has taken him Copenhagen’s 2 Michelin Star Noma, Northcote in Lancashire and Restaurant Gordon Ramsay.

It will be a true privilege to experience Parkin’s and Islam’s cheffing first hand later this month!

Holy moly, Bar Shrimp is something special.I was absolutely in my element on my solo seat at the counter last Friday. The team from Higher Ground have got this show well and truly nailed down, and it fits Manchester's food scene like Sunday's frozen pitch fits a Thermos flask. The best negroni I've ever tasted, followed by four Cumbrae oysters and a late Lindisfarne addition (Happy Hour!!! 50% off!!!).Scallop tartare (OMG) with elderflower dressing. Then a big old chunky spider crab: he was a chunky and delicious boy.I will devour padron peppers wherever I see them, but try them with bottarga (I didn't know either, dried fish roe pouch - apparently it's "the parmesan of the sea") grated over.Devilled eggs with brown crab and trout roe 🤌*mwah*, then Arbroath smokie fritters, outrageously moreish. Just for good mesaure a few more scallops: Grilled Queenie ones in mouclade butter to be precise.Head Chef YUNA KIM / 김유나 kitchen runs as smooth as the tarragon mayo that came with that delicious spider crab; and yes I can't get this outing out of my mind, so I've entered in to analogy "Inception". It's analogy within analogy; I'm comparing my meal to itself 🤯Gutted I didn't get the name of the guy on the bar so I could give him a shout out for spending the best part of two hours keeping me entertained, plying me with wine, and answering questions like "what's bottarga?" 🙃After me and the guy on the bar (sorry!) exchanged cat pictures, I was dragged out kicking and screaming, yelling "just one more oyster!" (That last bit is a lie.)In short; if you like a chilled vibe, exceptional seafood and a restaurant with a DJ, maybe we'll bump into each other next time I'm there. Which I'm hoping isn't too far off 🤓 ...

This beautiful country house hotel is set across 240 acres of parkland, surrounded by woodland and open countryside in Berkshire. 🌳A 5 Star hotel with a rather impressive spa, Michelin-starred dining, and one particularly unusual feature for a country house hotel — its own polo fields. 🐎With royal connections, an equestrian heritage and plenty of history tucked away among the trees…Can you guess where it is? 👀Swipe through and see if you can work it out. ...

I couldn't just take Manchester's Finest at their word regarding JOJI had to find out for myself. So that's what I did the other Saturday. On my bill. Eating raw fish and pretending that I can use chopsticks 🥢 It was incredible. Sublime. So fresh. Such amazing ingredients, treated with expertise and care. And I have to let you know, there's something to be said for dining alone; it's going to be my new hobby. There was a lovely moment sat at the counter, when a total stranger and I made eye contact as we tried a dish at the same time, and both did that narrowing of the eyes when you taste something delicious, as we shared a moment of appreciation for our experience. He then turned back towards the friends he had come along with 😂🤓Digression... Anyway it was top. In the words of Douglas Adams "thanks for all the fish" 😁🫡 ...
